2-minute Microwave Mocha Cake

I am always looking for a quick fix for dessert. Uncurably sweet-toothed, I really should stick with fresh fruits for an after dinner treat, but I am hopelessly indulgent. Now that I have this base recipe to go with, it is just going to get worse..presenting the two-minute microwave cake!

The recipe that I started out with used matcha, powdered green tea. However, I am unable to find matcha at short notice, so coffee & cocoa it was! I changed the recipe around, and I love my coffee strong; something that is reflected in the amount of coffee I use. You may want to change that around to suit your tastes.

Inggredients

1/2 cup mochi flour (sweet glutinious rice flour)
1/4 cup evaporated milk/full fat milk
1 tbs cornflour
4 tbs sugar (adjust to taste)
1/2 tsp baking powder
2 tsp butter, soften
2 tbs instant coffee
2 tbs drinking cocoa

In one mug, cream up soft butter with sugar until fluffy
Add eggs and continue whipping.
Add in the rest of the inggredients
Pour 1/2 in another mug
Stick both mugs in the microwave for 1 1/2 – 2 mins

And thats it! Remove, and enjoy. It is perfect for a quick snack or to appease a sweet tooth. It is excellent for experimentation, and I can just tell it will be divine with matcha. Maybe just cocoa, with marshmallows. Or just coffee…experiment, try it out. The texture of mochi flour is airy and light, different from the usual cake made with wheat flour. I love the chewy and airy texture this produces…making this the perfect lazy person dessert!



Bread & butter pudding

Winter months are cold, dark and pretty painful for me. Yep. Even after all these years. I yearn for something warming and comforting, thick, rich and yummy. I am a big lover of desserts, but as you can probably tell, I am not that good at baking. So bread & butter pudding was a heaven-sent for me – easy, simple and yummy :)

Inggredients (serves 4)
5 slices stale bread
30g brown sugar + more to sprinkle
30g melted butter
50g sultanas/currants
2 eggs, well beaten
1.5cup milk (or until bread is completely soaked)
1 stick cinnamon
1 tsp nutmeg
1 tbsp vanilla extract (or scrapings of 1 pod)

1) Chop slices of bread into roughly 6-9 pieces. Soak completely in milk for 10 mins
2) Melt butter, and mix in everything else in the baking bowl
3) Sprinkle the top with sugar for a ‘crispy top’ texture
4) Bake for 1 hour at 175 C.
5) Serve with a side of custard
