Cheater’s fish

Another recipie for my friend to wean her off potatoes..

I miss the traditional steamed grouper teochew style that my family used to order everytime we go out for dinner. It is usually served on a fish-shaped platter, with a small candle underneath to keep it warm. Filled with tofu,salted veg,ginger,mushroom and coriander,I love the gravy so much that the fish is literally secondary to me.

Until I have no more access to my beloved grouper.

For all the three years that I spent in Fresno, all the fish I had was finger-shaped or Mcfillet-shaped.I couldn’t afford to buy fish – but more importantly, I did not know how to cook fish!One of my ambitions at the start of my masak-masak was to learn how to cook fish. Bacon poach his fish in milk (!!!!!) – apparently it’s and English thing like Fish & Chips. And speaking of that, I usually order deep fried spam instead of Fish. MmmMMm….SPAM.

Anyway.I digress. Like most of my recipies, I would have a lingering taste in my mouth for a few days, and then decide to create a similar but simpler dish. I did not have a steaming dish nor a wok big enough to fit!

Ingg:
2 fillet of fish – I use cod.
2 inch of ginger, sliced or julienned
4 dried mushroom, soaked and julienned
2 chinese plums
2 tomatoes sliced
1 juice of lime (if you like)
1 pack of soft tofu -cubed
bunch of coriander for garnishing

First, make the ‘stock’ by adding all the ingg above (except tofu and coriander) into a shallow wok with 600ml water .Let it simmer for 10 minutes to get all the flavours into the stock

Add your fish – and coat all the inggredients on top. The stock is insufficient to cover all of the fish, so rememeber to keep turning it. I leave the cover on to sort of give it a ‘steaming’ effect. Add tofu at this stage.

Serve up after fish is cooked – should not be more than 10 minutes.

anyway, i will try all these expensive fish dishes when joel is here. fish here is damn ex.. and those black mushrooms.. lagi ex….:)

hahahha yah, actually you are eating pork not potatotes..

anyway, I didn’t think cod was that nice, it wasn’t ‘fishy’ enough and e gravy really excels in neutralizing the fishy taste. So choose more fishy fish – grouper, plaice, trout ect.

btw magges;compared to the rest of the world,the fish in AU is CHEAP.CHEAP CHEAP CHEAP! I get mine from the market, it is usually cheaper in the market.

Oh, black mushrooms, a little goes a long way.Its worth buying a pack.

Or you can put all that stuff on a plate, add a little oyster sauce or soy-sauce; put the plate above a wok of water, and steam away. But your method is good for those who don’t know how long to steam a particular kind of fish for – some take longer to get it just right.

thats the problem..I don’t have a wok big enough to do that! Damn screwy right.I can only steam on a steamer – my kitchen like play kitchen only.

Normally must put some wedges of tomatoes also. I don’t see tomatoes in your ingredients but in the picture.

Mmmmm yummylicious! Your makan makan posts really make me drool.

BTW, try to refrain from eating grouper. One, it’s expensive. Two, world populatioins are diminishing as it is an over-fished species caught in ecologically sensitive areas (e.g. coral reefs). Three, many other sustainably-fished species are available for consumption.

Today, i was sooooo star-struck! Was leaving my house to go to one utama and when i drove down the road, two doors down from my house, there was a car parked in front of the gate. Saw someone walking behind it so I slowed down in case she was gonna cross the road without looking. Then our eyes met. I smiled at her. She smiled back. (I thought it was my neighbour. After about a second after driving past, i realised who it was. None other than our national pride and joy – ASHA GILL!! I stone there for a while and was so filled with excitement i almost wet myself. I think i may have ‘dreams’ tonight. Hahaha. She SMILED at ME! I was beaming throughout the drive to one U. sigh….. :D :D

sh: Shit..now I kena scolding liao.Cannot reveal my fav fish! I already stopped eating tuna liao mar.And shark too,even though I actually like eating shark :/

Actually, I would only probably be able to eat one or two grouper each year – have not eaten one this year ler.

Do you remember our salted parrot fish!!!I still find it siao….colorful ham yue
